The film that smears instead of lifting

Every household in Gulshan knows the symptom, even without knowing the cause. Where the soot comes from: the yellow-tipped flame

A healthy gas burner burns blue, which means complete combustion: methane in, carbon dioxide and water out, nothing solid produced. A yellow or yellow-tipped flame means incomplete combustion, and its yellow colour literally is glowing carbon particles that then leave the flame as soot. Gulshan kitchens run yellow-tipped more than most of Karachi for mundane reasons: low sui-gas pressure at peak hours makes households open the burner valve wider than the air shutter can match, jets clogged by years of boil-overs disrupt the gas-air mix, and cylinder-fed backup stoves during gas load-shedding burn richer still. Hours of slightly-yellow flame per day, every day, produce a steady drizzle of sub-micron carbon that settles onto the nearest tacky surface, and the grease film above and around the stove is exactly that surface. The soot does not sit on the grease; fresh oil mist keeps arriving and buries it, so the carbon ends up laminated through the film’s full depth.

Why alkaline degreaser alone cannot remove it

Alkaline degreasers work by saponification: the high-pH product converts fats into water-soluble soaps, which rinse away. It is genuinely the right chemistry for grease. But saponification is a reaction with fat molecules, and carbon particulate is not a fat, it is elemental carbon, chemically inert to alkali at any strength you could safely bring into a kitchen. So the alkaline wash dissolves the oil matrix and releases the carbon as a loose, ultra-fine pigment suspended in your rinse water. Wipe it, and the cloth drags pigment across the surface; let it dry, and it re-deposits as the grey haze. More alkali, more scrubbing, hotter water: none of it changes the chemistry. This is the single most common reason a Gulshan household tells us “we deep cleaned ourselves and it looked worse”.

Solvent first, alkaline second: the order is the job

The professional sequence inverts the household one. First a solvent pre-soak, a citrus-terpene degreasing solvent applied and left to dwell, which does not react with the film but dissolves into it, swelling and liquefying the oil matrix so the trapped carbon is released into the liquid phase while everything is still wet and mobile. Then agitation with non-scratch pads, then extraction of the loaded solvent rather than smearing it, and only then the alkaline wash, which saponifies the residual oil layer now that the carbon burden is gone. A final neutralising rinse stops alkali residue dulling paint and tile. Same products a household could theoretically buy, completely different result, because the order and the dwell times are the actual technology.

The light-well problem in Gulshan’s walk-up blocks

A large share of Gulshan housing is three-to-five storey walk-up flats where every kitchen opens onto the same internal light-well or airshaft. There is no mechanical extraction to speak of; each kitchen’s window pushes its cooking aerosol and soot into the shared shaft, and the shaft redistributes it. At dinner time, six kitchens exhale into one column of air and every window ledge, grille and pane in that column collects the blend. Here is the advice that costs us repeat revenue: if your flame is burning yellow, spend a few hundred rupees at the hardware market on a burner service, cleared jets and an adjusted air shutter, before you spend thousands on us. A deep clean removes the deposit; only a blue flame stops it re-forming. Common questions

Why does the black film above my stove smear grey when I scrub it?

Because it is grease with carbon soot dispersed through it. Your degreaser dissolves the grease but cannot react with carbon, so the freed soot smears as a grey pigment and re-dries as haze. It needs a solvent soak to liquefy the film and carry the carbon out, then an alkaline wash for the remaining oil.

It matters because that soot is what rebuilds the un-scrubbable film. A basic burner service is cheap and extends the life of any deep clean by months.

Will the film come back faster because we live in a flat?

The window side will, if your kitchen opens onto a shared light-well: neighbouring kitchens vent into the same shaft and their aerosol lands on your ledges and grilles. Do you clean the exhaust hood and its baffles too?

Yes. Baffles, mesh filters and the oil collector come out and soak in a heated alkaline tank while the solvent phase runs on the fixed surfaces, and the hood underside gets the same solvent-then-alkaline sequence as the stove wall.
