Almost every DHA household we quote has a kitchen that is cleaned regularly, and almost every one of them still needs deep cleaning. That is not a contradiction and it is not a criticism of anyone’s staff. Grease in a Karachi kitchen exists in three distinct physical states, and daily or weekly cleaning only ever addresses the first one. The second and third need chemistry and heat that no domestic routine involves, and they are the layers actually responsible for the tacky cabinet doors above the stove, the sticky backsplash grout, and the smell that comes back an hour after the kitchen has been wiped down. This page covers what those layers are and how we remove each, alongside our Karachi-wide kitchen deep cleaning service.

The three layers

Layer one — fresh airborne mist. Cooking throws an aerosol of oil into the room, and it settles on every horizontal surface: the top of the fridge, cabinet doors, the wall tile above the stove. It is still soft, still water-emulsifiable, and a mid-pH degreaser at pH 9 to 10 lifts it without touching the surface underneath. This is the layer a good weekly clean removes, and if your kitchen looks clean this is why.

Layer two — polymerised film. Leave that mist for three to six months and oxygen plus Karachi heat cross-link the triglycerides into a tacky, varnish-like film that is no longer water-soluble at all. A pH 10 cleaner slides straight off it. This is what coats the cabinet doors above the stove and the backsplash grout, and it is why a surface can feel slightly sticky immediately after being wiped. Removing it needs a pH 11 to 13 alkaline degreaser and dwell time, because the reaction that breaks it is saponification, and saponification takes minutes rather than seconds.

Layer three — pyrolysed carbon. The black, brittle, often glossy crust on burner grates and the back of the burner shield. This is grease that has crossed its smoke point and carbonised into a matrix. No surfactant of any strength will touch it — the material is no longer a fat. It needs solvent-based crackers plus pressurised steam at 100 to 120°C to thermally shock the carbon off the substrate.

Which is the honest answer to the question we get asked most: no, you are not doing anything wrong. Layers two and three are a chemistry problem, not a diligence problem.

Why a Karachi kitchen loads faster than a Western one

We cook with ghee and mustard oil, and tarka flash-fries whole spices at smoke point, which is precisely the condition that produces pyrolysed rather than merely deposited residue. Biryani releases stained oil into the kitchen air over forty-five minutes at a time. Add Ramzan iftar frying, Eid meat in three formats, and a DHA household’s normal rate of dawats, and a kitchen here accumulates in months what a low-oil kitchen accumulates in years.

The DHA-specific multiplier is scale. Larger kitchens, a second dirty kitchen or utility area in many houses, and cooking volumes that go up sharply around entertaining. The grease does not distribute evenly either — it concentrates around the cooktop zone.

The surfaces that dictate the chemistry

This is where a strong degreaser becomes a liability rather than an asset, and it is the main reason we do not simply use the most aggressive product available on everything.

Marble and other calcareous stone. Common on DHA worktops and splashbacks. Marble is calcium carbonate, so any acid etches it, and etching is a physical change to the surface, not a stain. It will not polish out with cleaning. The citric acid we use to remove limescale around burner rings and the oxalic acid we use on stainless rust spotting are both correct on their intended surfaces and both permanently damaging on marble. We identify the stone before anything acidic comes out of the van.

Granite and engineered quartz. Far more tolerant than marble, but strong alkali degrades sealant over repeated exposure and quartz resin discolours under high-pH products left to dwell. We keep the pH 11 to 13 work on the tile and burner grates rather than letting it sit on the worktop.

Aluminium and anodised trim. Strong alkali attacks aluminium directly — it will dull, pit and go chalky grey, and that is irreversible. Aluminium fittings and some appliance trim get a controlled pH rather than the tank treatment.

Stainless steel. Takes alkaline work well. What it needs separately is oxalic acid at 5 percent for rust spotting and citric acid at 10 percent for the white limescale ring Karachi’s hard water leaves around burners. In the sea-facing phases stainless also develops tea-staining — a brown surface discolouration from chloride attack on the passive layer, which responds to the same acid treatment and then wants a passivating wipe rather than more scrubbing.

How we run a DHA kitchen

Stage 1. Survey and surface identification. Worktop material, splashback, cooktop type, and a look at the cabinet faces and tile above the stove, which tells us immediately how much of the job is layer two versus layer three.

Stage 2 — Cooktop, burners and jets. Burner caps and grates soak in a heated pH 12 to 13 alkaline tank for 30 to 45 minutes, then a steam blast at 100 to 120°C lifts residual carbon. Gas jets are cleared with brass picks — never steel, which damages the brass orifice and changes the flame. Stainless cooktops then get the oxalic and citric treatments described above, in that order, and marble surrounds get neither.

Stage 3. Cabinet faces, tile and grout. The polymerised layer on cabinet fronts and the wall tile above the stove takes the pH 11 to 13 product with proper dwell rather than harder scrubbing. Grout is porous and holds absorbed oil that surface cleaning never reaches, so it gets steam and, where the household wants it, sealing afterwards so the next twelve months of cooking does not soak straight back in.

Stage 4. Appliance interiors and behind. Oven, microwave, fridge exterior and the gap behind and under the fridge and cooker. That gap is where spilled oil, crumbs and dropped food accumulate out of sight, and in a Karachi kitchen it is the single most reliable cockroach harbourage in the room, which is why we look at it as a pest question as well as a cleaning one.

Stage 5 — Food-contact sanitisation and reassembly. Benzalkonium chloride at 0.13 percent on food-contact surfaces after the degreasing is complete and rinsed, because sanitising over grease sanitises the grease. Everything reassembled and the removed grease shown to you before it is taken away.

The pest connection nobody mentions

A greasy kitchen is not just unpleasant, it is a food supply. Polymerised grease behind the cooker and under the fridge sustains Blattella germanica indefinitely, and cockroach gel baiting works considerably better in a kitchen where the competing food source has been removed — a bait has to be more attractive than everything else available, and a decade of accumulated grease is stiff competition.

So when we find live cockroach evidence during a kitchen clean we say so and recommend sequencing: deep clean first, treatment second, in that order. It is also why households on a pest AMC who also deep-clean annually get materially better results than those doing either alone. See cockroach treatment and pest control in DHA.

DHA pricing

Small apartment kitchen: PKR 6,500-10,000.
Standard DHA or Clifton kitchen: PKR 12,000-18,000.
Large villa kitchen, DHA Phase 6-8 or Bahria: PKR 18,000-28,000.
Post-construction or handover clean: PKR 20,000-35,000 — paint splash, cement haze and grout sealing all add hours.
Grout sealing and second-kitchen or utility areas are quoted with the main job rather than as surprises on the day. Bundling with a full house deep clean reduces the combined job. Full bands are on our Karachi-wide kitchen deep cleaning page.

Booking, and what happens on the day

WhatsApp +92-311-1101810 with three photos: the wall and cabinets above the stove, the cooktop, and the worktop surface. The first photo tells us whether this is a layer-two or a layer-three job, and the worktop photo tells us whether we are working around marble — between them they decide the quote before anyone travels. Add your DHA phase and street. Confirmation inside 30 minutes during business hours, Mon-Sat 09:30-20:00, and DHA is 5-20 minutes from our Phase 4 office.

The team arrives with a heated alkaline soak tank, pressurised steam, alkaline degreasers across the pH range, solvent crackers, oxalic and citric acid, benzalkonium chloride, brass picks, and PPE including chemical-resistant gloves and eye protection. Clear the worktops and empty the area under the sink before we arrive. Allow 4 to 7 hours for a standard DHA kitchen and a full day for a large villa kitchen or a post-construction clean. The kitchen is usable as soon as we finish; food-contact surfaces are sanitised last for that reason.

Common questions

Which DHA phases do you cover?

All phases, plus Clifton and the Khayaban corridors, at identical published rates. We are based in Phase 4, so most Defence addresses are 5 to 20 minutes away and same-day slots are often available.

Our kitchen is cleaned every day. Do we need this?

Daily cleaning removes layer one and keeps the kitchen hygienic, which matters. It does not touch the polymerised film on the cabinet doors and backsplash grout or the carbon on the burner grates, because those are not water-soluble and cannot be removed by wiping at any frequency. The test is simple: run a finger along the cabinet door above your stove. If it comes away tacky rather than greasy, that is layer two, and it has been building for months.

How often should a Karachi kitchen be deep cleaned?

Every 6 to 12 months for a normal household, and every 3 to 6 months where there is heavy frying, frequent entertaining, or a joint family cooking at volume. The interval is driven by cooking style far more than by kitchen size — a small kitchen doing daily tarka loads faster than a large one used lightly.

Will the chemicals damage our marble worktop?

Not if the surface is identified first, which is why stage one is a survey rather than a formality. Marble is calcium carbonate and any acid etches it permanently — etching is physical damage, not staining, and no amount of subsequent cleaning reverses it. The acids we use on stainless steel and on limescale never go near calcareous stone. If a previous cleaner has already etched your marble, that is a stone-polishing job rather than a cleaning one.

Can you clean the kitchen hood only?

No. We do not clean kitchen hoods, baffles or exhaust ducts at all; they are outside our scope. Our kitchen deep clean covers everything around them: cabinet faces, tile and grout, worktops, the cooktop, burners and appliances.

Is it safe with food in the kitchen?

We ask for worktops to be cleared and for open food to be moved out of the room, because the alkaline products used on tile and grates are strong and should not be near food during application. Food-contact surfaces are degreased, rinsed, and only then sanitised with benzalkonium chloride at 0.13 percent, which is a standard food-contact concentration. The kitchen is ready to use when we leave.
